Celeriac and Sweet Potato Soup

Ingredients:

1 red onion, chopped
1 clove garlic, crushed
1 x 15mlsp (1tbsp) cooking oil
450g (1lb) celeriac, peeled
100g (4oz) sweet potato, peeled
750ml (1 1/2 pint) vegetable stock
1 x 15mlsp (1tbsp) lemon juice
Freshly ground black pepper and salt
125ml (1/4 pint) Loprofin PKU Drink

Method:

1. In a large pan, fry the onion and garlic in the oil, over a moderate heat, for 2-3 minutes, until tender.
2. Finely chop or process the celeriac and sweet potato, add to the pan with the stock.
3. Bring to the boil, reduce the heat, cover and simmer for 20 minutes, until the vegetables are tender.
4. Remove the pan from the heat and liquidise or process the soup until smooth, return soup to the pan.
5. Stir in the lemon juice, seasoning to taste and Loprofin PKU Drink, reheat the soup before serving.

Serve with Low Protein Part Baked Rolls or Baguettes

Serves 6

Notes:

Tip: The soup freezes well - store individual portions in sealed containers.
