Vegetables in White Sauce
There are a number of ‘free’ vegetables that can be used in this recipe.** Why not experiment with a combination eg: cauliflower and leek or carrots and celery? The range of flavours is endless

Ingredients:

200g (8oz) ‘free’ vegetables

100ml (4 fluid oz) Liquid Duocal

100-125ml (4-5 fluid oz) water

15g (1⁄2 oz) butter

15g (1⁄2 oz) Loprofin Low Protein Mix

Salt and pepper (optional

Method:

1. Cut the vegetables into chunks or small florets, place in a saucepan and cover with water. Bring to the boil, reduce the heat, cover and simmer for approximately 15 minutes, until tender.

2. Meanwhile prepare the sauce; pour the Liquid Duocal and 100ml (4 fluid oz) water into a small pan, add the butter and place the pan over a low heat until the butter has melted.

3. Sprinkle the Loprofin Low Protein Mix over the warm liquid and whisk until thoroughly blended.

4. Bring to the boil, stirring briskly to achieve a smooth sauce, adjust seasoning if required.

5. Drain the vegetables and combine with sauce. Mash the mixture or process with a hand held blender, adding extra water if necessary, to achieve the desired consistency.

Makes approximately 300ml (12 fluid oz)

Chunky Fruit Salad**

Ingredients:

1 slice melon e.g. honeydew or cantaloup

1⁄2 fresh or canned apricot

2-3 cherries

2-3 seedless grapes

Method:

1. Remove the seeds and skin from the melon and cut the flesh into cubes, place in a serving bowl.

2. Discard the stone from the fresh apricot and cut into 2 pieces, add to the serving bowl.

3. Halve the cherries and remove the stones, halve the grapes and combine with the fruit in the serving bowl.

Serves 1

NB: ensure that the grapes are not too small, as baby may try to swallow them whole.

Tip: Different fruits may be used in the salad, but ensure that they are of a varied texture and suitable size for baby to pick up and eat easily. Allowing baby to feed him/herself is ‘fun’ and also helps baby’s co-ordination.

TIPS

• Always allow food to cool to the required temperature before use.

• Once cooled, cover any unused food and transfer to a fridge.
